Sodium benzoate is a preservative (E211) with the chemical formula C₇h₅₅₂na. Benzoic acid causes naturally in lingonberry and rowan berries and sodium benzoate is salt extracted from benzoic acid. Sodium benzoate is used to protect products from fermenting and can be used in acidic foods such as jams, fruit and vegetable preparations, desserts, dressings and soups. Calculate 1 raw spice measure (½ g) to each kilo of finished product.
