Ascorbic acid, or vitamin C, is an organic acid and antioxidant. When man's body does not have the ability to produce private vitamin C, we must get it via the diet. Examples of foods containing high levels of vitamin C are potatoes, vegetables, citrus fruits, acidic berries, peppers, rosehips, currants and strawberries. Ascorbic acid (E300) is used to prevent fruit and berries to be browned by preservation. Calculate ½ - 1 krm (½ - 1 g) per kilogram of mos or per liter of syrup. Stir out the ascorbic acid in a little of the cooled moss or syrup and add the mixture to the mosette or the compote.
