Fennel is a floccular perennial that can be up to 2 meters high. It has long thin leaves and yellow flowers and reminds a lot about Dill in appearance. The fruit contains anitol, an emissary, volatile oil. Fennel is both a spice and a vegetable. As a spice, the fruits are mainly used but also the leaves, either fresh or dried. The taste is gentle and reminds a lot about the anise. The vegetable fennel is about big as a fist and this "tuber" can be eaten fresh in salads, boiled, gratified or prepared otherwise. Fennel offers a fine flavoring with licentice character in food bread, fish and vegetable dishes, soups and pots.
