Rosemary is a green bush with coniferous leaves and bleached blue flowers that will be about 1-1.5 meters high. It grows wild in the areas around the Mediterranean, preferably close to the coast on sandy, calver land. Rosemary can be used both fresh and dried. Many herb spices lose a lot in flavor when they are dried but rosemary gets rather a more intense taste when it is dried. Rosemary is a popular spice, especially in the Italian and French cuisine. It fits well to lamb, meat and bird dishes but also to vegetable dishes, often along with tomato and olive oil. Rosemary also has an ability to dampen flavor of fat and is therefore often used to fatty meat varieties such as pork.
