The ever-green spice tree tree becomes about 10 meters high and grows in South Africa's tropical forests and in the Caribbean. The tree bears fruit for 100 years. The fruits lose their spicy aroma when they mature and therefore they are harvested while they are still green and immature and then they are dried in the sun. The spice pepper has its own special taste and has no kinship with black and white pepper. It has a taste of pepper, cloves, cinnamon and nutmeg and is therefore under the name all spice in several languages, such as English "Allspice". Whole spice pepper fits well in marinades and calops and raises the taste when cooking fish, meat and sausage.
