Mustard seeds are the fruits of the genus Sinapsis within the family cross-flower plants. As the name reveals, mustard seeds are the main ingredient in mustard. Primarily there are three different varieties: white (also called yellow), brown and black. The whites are weakest, late brown and the blacks are strongest. Often a mixture is used in mustard to obtain the desired taste strength. Brown mustard seeds fit well to sauces, inlays, boiled fish, ham and sausage.
