Green pepper comes from the same plant as black and white pepper and are immature fruits. The pepper is harvested immature and for the green color to be retained, they are usually preserved by either freeze drying or laid in a law (usually salts or vinegar). The taste is aromatic, has a softer and more nuanced character than in both black and white pepper, but still with a pleasant heat. The freeze-dried grains are light and crispy and not as hard as black or white peppercorns. Green pepper fits well in sauces, color dishes and to grilled.
