Often it is used in meat dishes and to flavor rice. Cloves are often included in different spice mixes such as Curry, Garam Masala and the Chinese five spices (Szechuan peppers, star anise, cinnamon, cloves and fennel seeds). The clove has an intense aroma and should therefore be used with some caution. It fits well to pork, game, soups, marinades, fruit and in different inlays. For Christmas, we associate the clove mainly with gingerbread and mulled wine.
