One might think that nutmeg is a nut but it is not, but it is the core from the fruit of the nutmeg tree. Nutmeg is used worldwide in both dinner dishes, desserts and cookies. The nutmeg is good at dampening fat flavor and instead give a special pepperiness. Nutmeg is an obvious feature of béchamelsås (white milk based bases) and stews and is also included in the classic French spice mixture four spices (quatre épices) along with pepper, carnations and ginger used for, among other things, meat pots. Nutmeg can be purchased both whole and the ground and fits well to stewed macaroni, mashed potatoes, stowed vegetables, spinach, cheese and egg dishes.
